INGREDIENTS:

  • 1 cup atta/wheat flour
  • 1 cup besan/ bengal gram flour/ chickpea flour
  • ½ cup suji/semolina (optional)
  • 1½ cup ghee/clarified butter
  • 2 cups powdered sugar (you can add a little less powdered sugar or use jaggery powder as a substitute)
  • 1tbsp choti elaichi/ green cardamom powder

STEPS:

1) Heat ½ cup ghee in a pan and add the whole wheat flour to it. Roast the flour till it gets light brown. Next, set it aside to cool.

Note: When not just your kitchen, but your whole house will have the aroma of roasted whole wheat flour or bengal gram flour…you know you are done with roasting!

And an even better way to know if the roasting is done, is when the ghee starts to separate from the flour and when you can see a thin layer of it on top.

2) Repeat the same step with bengal gram flour in ½ cup ghee. And set it aside to cool.

3) Roast the semolina in the rest of the ghee and turn of the flame when it is done. You know the semolina is roasted when starts turning reddish brown. Once done, keep it aside to cool.

Note: The semolina is added for that extra crunch to the laddoos. So, you can skip this step if you wish to.

4) In a large pan or bowl, mix all the roasted ingredients and add the powdered sugar to it. Mix it with your hands or a fork.

5) Finally, add the cardamom powder and other dry fruits or seeds(optional) and mix it well.

6) Now make medium or large sized balls/laddus with your hands! (The size of the laddoos compelete depends on your preference.)

Note: These laddoos have a shelf life of around 3-4 months. Store it in an air tight container. You can either refrigerate it or keep it in a cool place!

You can also customize the recipe and make it healthier by adding different kind of seeds(watermelon seeds, flaxseeds, sesame seeds, pumpkin seeds, sunflower seeds) or dry fruits(almonds, pistachios, cashews) in a roasted and powdered form or simply roasted form.
