Chilli Mushroom Recipe

INGRDIENTS:

200gms button mushrooms, each mushroom halved

7-8tbsp vegetable oil

1 large capsicum, diced

2 medium sized red onions, diced

4-5 green chillies (you can add more if you want)

5 tbsp spring onions, chopped

1tsp tomato purée

2tbsp onion, finely chopped

3 tbsp garlic, finely chopped

1tbsp ginger, finely chopped

1tbsp fresh coriander leaves, chopped

1tsp garlic paste

1tsp black pepper powder

Salt to taste

5-6tbsp dark soy sauce

2tbsp chilli garlic sauce

2tbsp white vinegar

5tbsp flour(maida)

2tbsp corn flour

Water

INSTRUCTIONS:

Mix maida, salt, ½ tsp black pepper powder, 1 tbsp dark soy sauce and garlic paste with some water to make a thick batter.

Dip the mushrooms in this batter and let it rest for 5 minutes.

Meanwhile, heat the oil in a pan. Now, add the batter coated mushrooms one by one into the pan and fry until they turn light brown.

Once the mushrooms are fried, keep them aside and take the same oil to cook rest of the dish. This enhances the taste really well since mushroom has its own flavour.

Next, shallow fry the diced capsicum in the oil for 1 minute and keep them aside.

Likewise, repeat the same process with the diced onions.

In the remaining oil, start adding the chopped ginger, garlic, onions and chillies one by one. Once the raw smell fades away, add the tomato purée and keep stirring them.

After this, add the chilli garlic sauce, soy sauce, and vinegar. At this stage, add ½ tsp black pepper powder and salt to taste.

Keep stirring the sauce so that it doesn’t stick to the bottom of the pan. Now, add around 5-6tbsp water and cook the sauce for around 5 minutes.

Following this step, add the fried mushrooms along with 1tsp of each chopped spring onions and chopped coriander leaves and let the mushrooms soak some of that sauce.

In 2-3 minutes, add the fried capsicum and onions.

In the final step, mix corn flour with 3-4tbsp water, pour it in the dish and mix it well.

Keep the flame on for 3 more minutes after which add the chopped spring onions and coriander leaves.

Serve hot with fried rice, noodles or even chapatis/rotis
